  • 12-count pack of Hawaiian sweet rolls
  • 1.5 lbs chicken breast or tenders, cut into slider-sized pieces
  • 1/2 cup honey
  • 1/3 cup hot sauce (like Frank’s RedHot)
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 cup dill pickle slices
  • 2 cups shredded coleslaw mix (optional)
  • 1 cup panko breadcrumbs
  • 1 egg, beaten
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken pieces with salt, pepper, garlic powder, and smoked paprika. Dip each piece of chicken into the beaten egg, then coat thoroughly with panko breadcrumbs. Place the chicken on a parchment-lined baking sheet and lightly spray with cooking oil to ensure a golden, crispy finish.
  2. Slide the baking sheet into the oven and bake for 15 to 18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). While the chicken bakes, whisk together the honey and hot sauce in a small bowl. Adjust the ratio if you prefer more sweetness or more heat.
  3. Slice the entire block of Hawaiian rolls in half horizontally, keeping the individual rolls connected. Place the bottom half on a separate baking sheet. Brush the inside of the bottom rolls with a little bit of the melted butter. If you want a bit of crunch, toast the bottom buns in the oven for 3 minutes before adding the chicken.
  4. Once the chicken is cooked, remove it from the oven. Toss each piece of crispy chicken in the spicy honey mixture until fully coated. Arrange the glazed chicken pieces evenly across the bottom half of the rolls. Top with pickles and coleslaw if desired. Place the top half of the rolls over the chicken.
  5. Brush the tops of the rolls with the remaining melted butter. You can sprinkle some sesame seeds or parsley on top for extra flair. Place the sliders back in the oven for 5 to 7 minutes until the tops are golden brown and the buns are warm. Slice into individual sliders and serve immediately.
