Ingredients

Scale
  • 2 medium boneless, skinless chicken breasts
  • 2 ripe peaches, pitted and sliced into thick wedges
  • 2 large high-protein or whole wheat tortillas
  • 2 cups fresh baby spinach or arugula
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons feta cheese crumbles
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breasts dry with a paper towel. Rub them with olive oil and season both sides generously with salt and black pepper.
  2. Preheat your grill or a grill pan over medium-high heat. Place the chicken on the grill and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C). Once done, let the chicken rest for 5 minutes before slicing into thin strips.
  3. While the chicken is resting, place the peach wedges directly onto the grill. Cook for about 2 minutes per side until they have nice grill marks and become slightly soft. Remove them carefully with tongs.
  4. Lightly warm the tortillas on the grill for 30 seconds to make them more pliable and add a hint of smoky flavor.
  5. Lay the tortillas flat. Layer a handful of greens in the center, followed by the sliced grilled chicken, grilled peaches, and red onion. Sprinkle the feta cheese over the top and drizzle with balsamic glaze.
  6. Fold the sides of the tortilla inward and roll it tightly from the bottom up. Slice in half diagonally and enjoy immediately.
